Where my peanut butter lovers at? Specifically peanut butter cup. And if we’re getting real specific…rich dark chocolate dreamy peanut butter chunks all studded into a cupcake. Or in this case…COOKIES.
When I think of the holidays, my brain screams cookies. We’ll save the wholesome cupcake recipe for another time. Like TNK’s 1st year bday maybe? Oooo yeah I love that idea. Stay tuned.
Let’s stick with the present moment though. PEANUT BUTTER CUP LOVERS DREAM COOKIE. That happen to be full of real nourishing ingredients. Gosh darn I love this time of year. One of my favorite parts of recipe development and baking is knowing the love it’s going to bring someone.
Instert cheeseball moment. I KNOW. But can you really blame me right now? I mean it’s bad enough all the holiday decor is in full swing here in boston, couples holding hands everywhere, snow falling, gingerbread aromas taking over and gift giving all around…plus Love Actually has been part of my self-care movie routine and I can’t help but feel extra romantic.
Lucky for you, recipes like this come about. Don’t get me wrong though, my mind is not all YAY FOR LOVE right now. But i’d rather not dwell on the overwhelming energy that comes along with my current clinical rotation.

Peanut Butter Cup Lovers Dream Cookie Details
When I was at FNCE a few months ago I got to meet the brains behind Unreal Snacks which happens to be a Boston start up so you know I was intrigued (created by a brother and sis, so cute!). This post isn’t sponsored by them at all, I genuinely loved talking with Ann , learning about their quality ingredients and TASTING the damn delicious chocolate treats. Think fair trade chocolate, certified organic, nothing artifical and gluten free/vegan friendly. This nutrition nerd was hooked and tummy super satisfied.
The cookies here are a doctored up version of your typical peanut butter blossom cookie. You know how I do people. I stuffed the simple cookie base with Unreal PB Cups for quality purposes, but feel free to use your favorite brand! Trader Joe’s also sells amazing dark chocolate peanut butter cups.
Cookie Base: The base of these cookies are a spinoff from my gluten free cashew cookies. All you need is peanut butter, coconut sugar, pure maple syrup, an egg and some spices. Easy peasy my friends!
PB Cup Stuffing Method: Before you place the peanut butter cups into the cookies, you’ll bake the cookies FIRST. This is key as the pb cups would melt too much and get mushy. I’m sure the cookies would still be delicious but if you want them to look somewhat presentable and easy to work with, try my method first! If you’re not using pb cups, fold in some dark chocolate chips to the batter! See the recipe below for full details.
Cookie Scoop: I HIGHLY reccommend using a cookie scoop for these cookies (and all your future cookies in general!) since the batter is super doughy/can be sticky! Honestly, a cookie scooper is a KITCHEN STAPLE and you will be so happy you own one. Mine is similar to THIS ONE.
Serves: 16-18 cookies
- 1 cup creamy peanut butter (or chunky; not too liquidy)
- ¼ cup maple syrup
- ¼ cup coconut sugar
- 1 egg
- ½ tsp baking soda
- ½ tsp each: cinnamon + nutmeg + sea salt to taste
- ~18 small peanut butter cups**
- Preheat oven to to 350 degrees farenheit. Line a large baking sheet with a slipmat or cookie sheet.
- Whisk together all cookie ingredients except peanut butter cups, until a dough forms. Using a cookie scoop, scoop the dough into medium sized balls (or use ~2 Tbsp. per cookie) and lightly press down onto cookie sheet.
- Bake cookies for 12 minutes. Press the peanut butter cups into each cookie immediately and sprinkle with some sea salt. Allow to cool for at least 30 minutes to an hour.
